Simple Cabbage Curry
Here’s a simple South Indian-style cabbage curry recipe. It’s light, flavorful, and perfect as a side dish with rice or chapati.
Ingredients:
- 2 cups cabbage, finely chopped
- 1 small onion, finely chopped
- 1 green chili, slit
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (optional)
- 5-6 curry leaves
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons grated coconut (optional but recommended)
- 1/4 cup water
Instructions:
Prepare the tempering:
Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add urad dal, curry leaves, and the slit green chili. Sauté for a few seconds until aromatic.
Add onions:
Add the chopped onions and sauté until they turn soft and translucent.
Cook the cabbage:
Add the chopped cabbage, turmeric powder, and salt. Mix well. Cover and cook on low heat for 5-7 minutes, stirring occasionally.
Spice it up:
Add red chili powder and mix well. Sprinkle a little water, cover, and cook for another 5 minutes until the cabbage is tender.
Finish with coconut:
Once the cabbage is cooked, add grated coconut, mix well, and turn off the heat.
Serve:
Serve hot with steamed rice, sambar, or chapati.
