Muklai Paratha Recipe
Muklai Paratha is a traditional India and Bangladesh paratha, often made with wheat flour dough and stuffedwith a spiced filling of mashed potatoes, vegetables, or paneer. The name muklai refers to the preparation being sealed or muklai which translates to a “closed” style of paratha.
Here’s a recipe to make Muklai Paratha with a simple spiced potato and egg filling:
Ingredients:
For the dough:
- 2 cups whole wheat flour (atta)
- 1/4 tsp salt
- Water (as needed, to make the dough)
- 1 tbsp oil (optional)
For the filling:
- 2 large boiled potatoes (peeled and mashed)
- 1 onion (finely chopped)
- 1-2 green chilies (finely chopped)
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt, to taste
- Fresh coriander leaves (chopped)
- 1 tbsp lemon juice (optional)
Instructions:
1. Prepare the dough:
- In a mixing bowl, combine whole wheat flour and salt.
- Add a little oil if desired (it helps make the paratha softer) and mix.
- Gradually add water and knead the dough until smooth and soft.
- Cover with a damp cloth and let it rest for 20-30 minutes.
2. Prepare the filling:
- Heat a little oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and green chilies. Sauté until the onions turn golden.
- Add turmeric powder, coriander powder, garam masala, and salt. Mix well.
- Add the mashed potatoes and cook for 3-4 minutes, mixing everything together.
- Add chopped coriander leaves and lemon juice. Remove from heat and let it cool.
3. Shape the paratha:
- Divide the dough into small equal-sized balls (about the size of a golf ball).
- Roll each ball into a small, flat disc (about 4-5 inches in diameter).
- Place a spoonful of the potato filling in the center of the disc.
- Carefully fold the edges of the dough over the filling, sealing it tightly (like a pouch or dumpling).
- Roll it gently into a flat, round paratha, making sure the filling does not spill out.
4. Cook the paratha:
- Heat a tawa (griddle) or non-stick pan over medium heat.
- Place the stuffed paratha on the tawa and cook for about 1-2 minutes, until brown spots appear.
- Flip the paratha and apply some oil or ghee on the cooked side.
- Flip again and cook until both sides are golden brown and crisp.
- Repeat with the remaining dough and filling.
- Serve the Muklai Paratha hot with yogurt, pickle, or a side of curry.
