Jordanian Chicken Recipe – Mansaf Recipe

Introduction

Delicious  Mansaf chicken recipe that you can easily prepare at home. This dish, often called “Mansaf,” is a traditional Jordanian meal typically served on special occasions or gatherings.

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups of plain yogurt
  • 1/4 cup of pine nuts
  • 1/4 cup of slivered almonds
  • 1/4 cup of clarified butter (ghee)
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground cardamom
  • 1 teaspoon of ground turmeric
  • Salt and pepper to taste
  • Cooked rice (traditionally served with Jordanian rice, but any long-grain rice will work)

Instructions:

  • Marinate the Chicken:
    • In a large bowl, mix together yogurt, minced garlic, ground cinnamon, ground cardamom, ground turmeric, salt, and pepper.
    • Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to infuse
  • Cook the Chicken:
    • Firstly, In a large skillet or pot, heat the clarified butter over medium heat.
    • And then, Add the chopped onions and cook until they are soft and translucent.
    • Lastly, Remove the marinated chicken from the refrigerator and add it to the skillet with the onions. Cook until the chicken is browned on all sides.
  • Simmer:

  • Once the chicken is browned, add enough water to cover the chicken pieces.
  • Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 45 minutes to 1 hour, or until the chicken is tender and fully cooked. Stir occasionally.
  • Prepare the Garnish:
    • Moreover, While the chicken is simmering, toast the pine nuts and slivered almonds in a separate skillet until they are golden brown. Set aside.
  • Assemble:
    •  Finally, when the chicken is ready then arrange the cooked rice on a large serving platter.
    • Place the chicken pieces on top of the rice.
    • Pour the yogurt sauce over the chicken and rice.
    •  At last, Sprinkle the toasted pine nuts and slivered almonds on top as a garnish.
  • Serve:
