Here’s how you can prepare it:

Ingredients:

For the filling:

  • 4 large eggs
  • 1 onion, finely chopped
  • 1 green chili, chopped (optional, adjust to your heat preference)
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • 2 tbsp mustard oil (or oil of your choice)

For the dough:

  • 1 cup rice flour
  • 1 tbsp all-purpose flour (optional, helps with binding)
  • ¼ tsp cumin seeds
  • 1 tsp carom seeds (ajwain)
  • 1 tbsp mustard oil
  • Salt to taste
  • Warm water (to knead)

Instructions:

Step 1: Prepare the filling

  1. Boil the eggs: Hard boil the eggs and peel them. Once cool, roughly chop the eggs and set aside.
  2. Cook the filling: Heat 2 tbsp mustard oil in a pan. Add the chopped onions and green chili, and sauté until the onions are soft and translucent.
  3. Add ginger-garlic paste, cumin powder, coriander powder, turmeric, and salt. Stir and cook until fragrant.
  4. Add the chopped eggs and mix well, mashing them slightly as you stir. Cook for 2-3 minutes so the eggs absorb the spices. Garnish with chopped coriander leaves. Set aside to cool.

Step 2: Prepare the dough

  1. In a mixing bowl, combine the rice flour, all-purpose flour, cumin seeds, carom seeds, and salt.
  2. Heat a small pan and add the mustard oil. Pour the hot oil into the flour mixture and stir to combine.
  3. Gradually add warm water, kneading the dough until smooth and pliable, similar to dough for dumplings or pasta.

Step 3: Assemble the pithas

  1. Divide the dough into small balls, roughly the size of a ping pong ball.
  2. Flatten each ball into a small disc using your fingers or a rolling pin, about 2-3 inches in diameter.
  3. Place a spoonful of the egg filling in the center of each disc.
  4. Carefully fold the edges over the filling, pinching to seal them into a half-moon or rounded shape.

Step 4: Steam the pithas

  1. Grease a steamer basket or plate with a little oil. Arrange the pithas on the steamer, leaving space between them.
  2. Steam the pithas for 15-20 minutes, or until they are fully cooked and firm to the touch.
  3. Remove from the steamer and let cool slightly before serving.
