Here’s a simple and delicious fried rice recipe that you can easily make at home:

 

Ingredients:

  • 3 cups cooked rice (preferably day-old rice)
  • 2 tablespoons vegetable oil (or any cooking oil)
  • 2 eggs, lightly beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots (or mixed veggies of your choice)
  • 2-3 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon oyster sauce (optional, for extra flavor)
  • 1/2 teaspoon sesame oil (optional, for added aroma)
  • 1-2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Prepare the rice: If using fresh rice, spread it out on a baking sheet or plate and let it cool down for about 15-20 minutes. Day-old rice works best because it’s less sticky and easier to fry.
  2. Scramble the eggs: Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Pour in the beaten eggs and scramble them, stirring constantly. Once cooked, transfer the eggs to a plate and set aside.
  3. Sauté the vegetables: In the same pan, add the remaining tablespoon of oil. Add the chopped onion and garlic, and sauté for 1-2 minutes until fragrant and softened. If using frozen peas and carrots, add them now and cook for another 2-3 minutes until heated through.
  4. Add the rice: Add the cooked rice to the pan. Use a spatula to break up any clumps and mix the rice with the vegetables.
  5. Season the rice: Drizzle the soy sauce, oyster sauce (if using), and sesame oil over the rice. Stir well to combine and coat the rice evenly with the sauce.
  6. Add the scrambled eggs: Once the rice is well-mixed and heated through, return the scrambled eggs to the pan. Stir them in with the rice and veggies.
  7. Taste and adjust: Taste the fried rice and adjust seasoning with salt and pepper if needed. If you like it a bit more flavorful, add a little extra soy sauce.
  8. Garnish and serve: Sprinkle sliced green onions on top for garnish and serve hot.
