5.1 tbsp olive oil
6.1 small red onion, finely chopped
7.1 stalk celery, diced
8.1 tbsp fresh parsley, chopped
9.½ tsp garlic powder
10.½ tsp paprika
11.Salt and pepper, to taste
12.1 boiled egg (optional, for extra protein)
1.Cook the potatoes:
Wash and dice the potatoes (leave the skin on for extra fiber). Boil them in salted water for about 10-12 minutes or until tender. Drain and let them cool.
2.Prepare the dressing:
In a bowl, mix Greek yogurt, Dijon mustard, lemon juice, olive oil, garlic powder, paprika, salt, and pepper.
