Ingredients
For the Pitha (Rice Cakes):
- Rice flour: 2 cups
- Warm water: 1–1.5 cups (as needed for the batter)

- Ghee or oil: For greasing the pan
For the Sweetened Milk:
- Full-fat milk: 1 liter
- Sugar: 1/2 cup (adjust to taste)
- Cardamom pods: 3–4 (crushed)
- A pinch of salt
- Chopped nuts (optional): Almonds, pistachios, or cashews for garnish.
Instructions
Step 1: Prepare the Batter
- In a mixing bowl, combine rice flour and a pinch of salt.
- Gradually add warm water and mix to form a smooth, lump-free, pancake-like batter. The consistency should be pourable but not too watery.
Step 2: Cook the Pitha
- Heat a non-stick pan or a tawa on medium-low heat. Lightly grease it with ghee or oil.
- Pour a ladleful of batter onto the pan (like making small pancakes). Spread it slightly to form a thin layer.
- Cover and cook for about 1–2 minutes until the pitha is cooked and starts to lift from the edges. There’s no need to flip it.
- Remove from the pan and repeat with the remaining batter.
Step 3: Prepare the Sweetened Milk
- In a large saucepan, bring the milk to a boil.
- Reduce the heat and simmer, stirring occasionally, until the milk reduces slightly and thickens.
- Add sugar, crushed cardamom, and a pinch of salt. Mix well and let it simmer for a few more minutes.
Step 4: Assemble the Dudh Chitoy Pitha
- Place the cooked pitha in a deep dish or bowl.
- Pour the warm sweetened milk over the pitha, ensuring they are fully soaked.
- Let the pitha soak for at least 30 minutes to absorb the milk.
Step 5: Serve
- Garnish with chopped nuts if desired.
- Serve warm or chilled as per your preference
