Delightful Dudh Laccha Semai

Delightful Dudh Laccha Semai is a creamy, induligent Indian dessert made with vermicelli, milk, and sugar. It’s rich, aromatic, and perfect for festive occasions or as a comforting treat.

Delightful Dudh Laccha Semai Here’s how to make it :

Ingredients:

  • Vermicelli (Semai) – 100 grams
  • Full cream milk – 1 liter
  • Sugar – 4-5 tablespoons (adjust to taste)
  • Cardamom powder – ½ teaspoon
  • Saffron strands – a few (optional)
  • Ghee – 1 tablespoon
  • Chopped nuts (cashews, almonds, pistachios) – 2 tablespoons
  • Raisins – 1 tablespoon (optional)
  • Rose water or kewra water – ½ teaspoon (optional, for fragrance)

Instructions:

  1. Roasting the Vermicelli:
Heat 1 tablespoon of ghee in a pan over medium heat. Add the vermicelli and roast it until it turns golden brown. Stir continuously to avoid burning. Set aside.
  2. Preparing the Milk: In a separate heavy-bottomed pan, bring the milk to a boil on medium heat. Once it starts boiling, reduce the heat to low and let it simmer, stirring occasionally to avoid the milk from sticking to the bottom. Allow the milk to reduce slightly.
  3. Cooking the Vermicelli: Add the roasted vermicelli to the simmering milk. Stir it well and let it cook on low heat for about 5-7 minutes, or until the vermicelli softens and absorbs the milk.
  4. Flavoring the Dessert: Add the sugar, cardamom powder, and saffron (if using). Stir to dissolve the sugar completely. Let the semai cook for another 5 minutes, until it reaches a creamy consistency. If you like it thinner, you can add a little more milk.
  5. Adding Nuts and Raisins: In a small pan, heat a little ghee and fry the chopped nuts and raisins until they are golden and aromatic. Add them to the semai mixture, reserving a few for garnishing.
  6. Finishing Touches: Add the rose or kewra water (optional) for a delicate fragrance and mix well. Adjust the sweetness if needed by adding more sugar.
  7. Serve:
Once the semai has reached a creamy and thick consistency, turn off the heat. Let it cool slightly before serving or refrigerate it for a chilled version. Garnish with the remaining nuts and raisins.

Tips:

  • For a richer version, you can add a tablespoon of condensed milk.
  • The texture should be creamy, but not too thick—if it becomes too thick while cooling, you can add a little milk to loosen it.
