- Chicken Parmesan (or Chicken Parmigiana) is a classic Italian-American dish made with breaded and fried chicken cutlets, topped with marinara sauce and melted mozzarella cheese. It’s typically served with pasta, but can also be enjoyed with a side of vegetables or a salad. Here’s a simple recipe to make it:
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups marinara sauce (store-bought or homemade)
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup fresh basil or parsley (optional, for garnish)
- Olive oil (for frying)
Instructions:
- Prep the chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper. If the breasts are thick, you can cut them in half horizontally to make them thinner or pound them to an even thickness for quicker cooking.
- Breading the chicken: Set up a breading station with three shallow dishes. Place the flour in the first dish, beaten eggs in the second, and a mixture of breadcrumbs and Parmesan in the third. Dredge each chicken breast in the flour, dip into the eggs, and then coat in the breadcrumb mixture, pressing gently to make sure it sticks.
- Fry the chicken: In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once the oil is hot, fry the chicken breasts for 3-4 minutes per side, until golden and crispy. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.
- Assemble the Chicken Parmesan: Place the fried chicken breasts on a baking sheet. Spoon marinara sauce over each piece of chicken, then top with shredded mozzarella.
