Bhuna Khichuri Homemade Recipe

Bhuna Khichuri Recipe is a Bangli style comforting, spiced version of khichuri that’s often enjoyed during the monsoon season in Bengal. It’s a delicious mix of rice, lentils, and whole spices, cooked together to create a flavorful, one-pot meal.

Ingredients:
- Rice: 1 cup (preferably Basmati or any long-grain rice)
- Moong dal (yellow split lentils): 1/2 cup
- Ghee: 2-3 tbsp
- Onion: 1 large, finely sliced
- Ginger-garlic paste: 1 tbsp
- Green chilies: 2-3, slit
- Whole spices:
- Cinnamon stick: 1-inch
- Cloves: 2-3
- Green cardamom: 2-3
- Bay leaf: 1
- Turmeric powder: 1/2 tsp
- Cumin seeds: 1/2 tsp
- Red chili powder: 1/2 tsp (optional, for heat)
- Salt: to taste
- Water: 3 cups (adjust for desired consistency)
- Ghee (for garnish): 1 tbsp
Instructions:
- Rinse the Rice and Lentils:
- Wash the rice and moong dal together thoroughly until the water runs clear. Drain and set aside.
- Temper the Spices:
- Heat 2-3 tbsp of ghee in a deep pan or pressure cooker over medium heat.
- Add the whole spices (cinnamon, cardamom, cloves, and bay leaf) and cumin seeds. Let them splutter for a few seconds to release their aroma.
- Sauté the Onion & Ginger-Garlic Paste:
- Add the sliced onions and sauté until they become golden brown. Stir in the ginger-garlic paste and green chilies, cooking for another 1-2 minutes until fragrant.
- Cook the Rice and Lentils:
- Add the washed rice and moong dal to the pan. Stir gently to combine with the ghee and spices.
- Sprinkle in the turmeric powder and red chili powder, and mix well.
- Add Water and Cook:
- Pour in the water and add salt to taste. Bring the mixture to a boil.
- Once it boils, reduce the heat, cover the pan, and cook on low heat for about 15-20 minutes or until the rice and lentils are soft and fully cooked. If using a pressure cooker, cook for about 2 whistles on medium heat.
- Final Touch:
- Once cooked, fluff the khichuri with a fork. Drizzle 1 tbsp of ghee on top and let it rest for 5 minutes for added richness.
- Serve:
- Serve hot with a side of fried vegetables, eggplant bhaja (fried eggplant), or a simple pickle.
