Ingredients:
For the Beef:
- 1 kg beef (boneless, cut into large chunks)
- 1 large onion (sliced)
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 2 teaspoons turmeric powder
- 2 teaspoons red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 3-4 dried red chilies
- 3-4 green cardamoms
- 2-3 cinnamon sticks
- 5-6 cloves
- 2-3 bay leaves
- 1/2 cup mustard oil (or regular cooking oil)
- Salt (to taste)
- 3-4 cups water
For the Final Touch:
- 2 tablespoons ghee
- 3-4 green chilies (sliced)
- 1 teaspoon sugar (optional)
- Fresh coriander leaves (chopped, for garnish)
Instructions:
Step 1: Preparing the Beef
Wash the beef and pat it dry.
In a large pot or pressure cooker, heat mustard oil until it smokes slightly. Reduce heat to medium.
Add bay leaves, cardamoms, cinnamon, cloves, and dried red chilies. Saute for 30 seconds until aromatic.
Add sliced onions and cook until golden brown.
Add ginger paste, garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook the spices for 2-3 minutes.
Add the beef chunks and mix well, ensuring the spices coat the meat evenly.
Cover and cook on low-medium heat, stirring occasionally, until the beef releases its juices. This may take 10-15 minutes.
Step 2: Cooking the Beef
Add water to the pot, enough to submerge the meat.
Cover and cook until the beef becomes tender and the water reduces significantly, leaving a thick gravy. (In a pressure cooker, this may take about 30 minutes; in a regular pot, about 1.5-2 hours.)
Once the beef is tender, shred it using a fork or your hands while still in the pot.
Step 3: Final Touch
Heat ghee in a separate pan and add the shredded beef.
Add garam masala powder and sugar (if using). Stir well.
Add sliced green chilies and mix. Cook for 5-7 minutes on medium-high heat until the beef becomes slightly crispy and dry.
Garnish with fresh coriander leaves.
