Best Jolpai Achar Recipe: In India(Olive Pickle) is a popular traditional Indian pickle made from green olives. Here’s a simple and flavorful recipe for making Jolpai Achar:
Ingredients:
- 250g green olives (jolpai)
- 2 tbsp mustard oil (or any oil of your choice)
- 1 tbsp mustard seeds
- 1 tsp fenugreek seeds
- 1 tbsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp red chili powder (adjust to taste)
- 1 tbsp coriander powder
- 1 tsp sugar (optional)
- 1 tbsp salt (adjust to taste)
- 1 tbsp vinegar (optional, for a tangy flavor)
- 2-3 dried red chilies (optional for extra heat)
Instructions:
Prepare the Olives:
Wash the olives thoroughly and pat them dry.
Pierce each olive with a fork or a sharp knife to help it absorb the spices.
Optionally, you can lightly blanch the olives in hot water for 5-7 minutes to soften them, then drain them well.
Tempering the Spices:
Heat mustard oil in a pan over medium heat. Once the oil is hot, add mustard seeds, fenugreek seeds, and cumin seeds.
Allow them to splutter and release their aroma.
Add turmeric powder, red chili powder, coriander powder, and dried red chilies (if using). Stir well and cook for another 1-2 minutes to roast the spices.
Making the Achar:
Turn off the heat and let the spice mixture cool slightly.
Once cooled, add salt, sugar (if using), and vinegar. Mix everything well.
Add the pierced olives to the spice mixture and toss them gently so that the spices coat the olives evenly.
Maturation:
Transfer the mixture to a clean, dry jar with a tight lid.
Let the pickle sit at room temperature for 4-5 days, shaking the jar gently once a day. This helps the olives absorb the flavors.
The pickle should be ready to eat after about a week. You can refrigerate it to prolong its shelf life.
Tips:
The olives will become more flavorful as they age, so the longer you wait, the tastier it will become.
Adjust the level of spiciness and tanginess to suit your preference.
