Homemade Tiffin Dora Cake
A Tiffin Dora Cake is a delightful treat combining the classic flavors of tiffin (a no-bake chocolate biscuit cake) and the iconic Japanese Dora Cake (a pancake sandwich filled with sweet paste). Here’s a step-by-step guide to make a homemade version:
Ingredients:
For the Tiffin Layer:
- 200g digestive biscuits (crushed into small pieces)
- 100g unsalted butter
- 2 tbsp golden syrup or honey
- 150g dark chocolate
- 50 g milk chocolate
- 50 g chopped nuts or dried fruits (optional)
For the Pancakes (Dora Cake):
- 2 large eggs
- 100g plain flour
- 1/2 tsp baking powder
- 50 g sugar
- 1 tbsp honey
- 2-3 tbsp milk (adjust for consistency)
For Filling:
- Sweetened whipped cream, chocolate ganache, or red bean paste (traditional for Dora cakes)
Instructions:
1. Prepare the Tiffin Base:
- Melt the butter, dark chocolate, milk chocolate, and golden syrup in a heatproof bowl over simmering water.
- Once melted, remove from heat and stir in the crushed biscuits and nuts/dried fruits.
- Press the mixture firmly into a lined round cake tin and chill in the fridge until set.
2. Make the Dora Pancakes:
- In a bowl, beat eggs and sugar until pale and frothy. Add honey and mix well.
- Sift in flour and baking powder, then mix until smooth. Add milk gradually to achieve a pourable batter.
- Heat a non-stick pan over low-medium heat. Pour small amounts of batter to form 3-4 inch pancakes.
- Cook until bubbles appear, then flip and cook for another minute. Cool on a rack.
3. Assemble the Tiffin Dora Cake:
- Remove the tiffin base from the fridge and place it on a serving plate.
- Spread your chosen filling over the top.
- Stack one or two pancakes over the filling, ensuring even layers.
- Repeat layers of filling and pancakes as desired, finishing with a pancake on top.
4. Decorate:
- Dust with powdered sugar, drizzle with melted chocolate, or top with fruits for garnish.
