Ingredients:
1.2 cups masa harina
2.1 ½ cups warm pineapple juice (or water)
3.1 teaspoon baking powder
4.½ teaspoon salt
5.½ cup granulated sugar
6.½ cup unsalted butter (softened) or vegetable shortening
7.1 teaspoon vanilla extract
8.1 cup crushed pineapple (drained)
9.½ teaspoon ground cinnamon (optional)
10.½ cup raisins (optional)
11.10-12 dried corn husks, soaked in warm water
Instructions:
Prepare the Corn Husks
Soak the corn husks in warm water for 30 minutes until soft.
Make the Masa Dough
In a mixing bowl, beat the butter (or shortening) and sugar until fluffy.
In a separate bowl, combine masa harina, baking powder, salt, and cinnamon.
Slowly add warm pineapple juice to the masa mixture, stirring to combine.
Add the butter mixture and vanilla, then mix until smooth and spreadable.
Incorporate the Pineapple & Raisins
Fold in the crushed pineapple and raisins.
Assemble the Tamales
Spread 2-3 tablespoons of masa mixture onto the center of a corn husk.
