Easy Pineapple Chicken fried & Rice Recipe
Here’s a simple and quick recipe for Pineapple Chicken Fried Rice!
Ingredients:
For the Pineapple Chicken:
1.2 boneless chicken breasts (cut into bite-sized cubes)
2.1 tablespoon soy sauce
3.1 tablespoon olive oil or vegetable oil
4.1 teaspoon ginger (fresh or ground)
5.2 garlic cloves (minced)
6.1/2 cup pineapple chunks (fresh or canned, drained)
7.Salt and pepper to taste
8.Optional: 1 tablespoon honey or brown sugar for a sweet touch
For the Fried Rice:
1.2 cups cooked rice (preferably day-old rice)
2.2 tablespoons soy sauce
3.1 tablespoon sesame oil (or vegetable oil)
4.1/2 onion (diced)
5.1/2 cup mixed vegetables (carrots, peas, corn, etc.)
6.2 eggs (beaten)
7.1/4 cup green onions (chopped)
8.Salt and pepper to taste
Instructions:
1. Cook the Chicken:
Heat 1 tablespoon of oil in a pan over medium heat.
Add the diced chicken and cook until golden brown and cooked through, about 5-7 minutes.
Season with salt, pepper, soy sauce, and ginger.
Add the minced garlic and pineapple chunks, stir, and cook for another 2-3 minutes until everything is heated through.
If you’d like a sweeter touch, drizzle in a little honey or brown sugar at this stage.
Remove from the pan and set aside.
2. Prepare the Fried Rice:
In the same pan, add the sesame oil.
Saute the diced onion and mixed vegetables until soft (about 3-4 minutes).
Push the vegetables to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until fully cooked.
Add the day-old rice, breaking up any clumps. Stir everything together.
Pour in the soy sauce, and add salt and pepper to taste.
Stir in the cooked chicken and pineapple mixture. Cook for another 2-3 minutes to combine flavors.
3. Serve:
Garnish with chopped green onions.
