Ingredients:
1.100-150g Loitta Shutki (dried loitta fish)
2.2 tablespoons mustard oil
3.1 medium-sized onion, finely chopped
4.2-3 cloves garlic, minced
5.1-2 green chilies, chopped
6.1 medium-sized tomato, chopped (optional)
7.1 teaspoon turmeric powder
8.1 teaspoon red chili powder (adjust to taste)
9.Salt to taste
10.1/2 teaspoon cumin seeds (optional)
11.Fresh coriander leaves (for garnishing)
Instructions:
Soak the Shutki Fish:
1. Rinse the dried Loitta fish under cold water to remove any dust or excess salt.
2.Soak the fish in warm water for about 10-15 minutes to soften it. Once it softens, remove the bones if you prefer and set it aside.
Prepare the Base:
1. Heat mustard oil in a pan over medium heat.
2.Add the cumin seeds (if using), and once they splutter, add the chopped onions. Saute until the onions become soft and golden brown.
Add Garlic and Spices:
1.Add the minced garlic and chopped green chilies to the onions. Saute for another minute until fragrant.
2.Add turmeric powder, red chili powder, and salt. Stir well to combine.
Cook the Shutki Fish:
1.Add the soaked Loitta Shutki fish to the pan. Stir gently to coat the fish with the spice mixture. Be careful not to break the fish.
2.Add the chopped tomato if using, and cook for about 5-7 minutes, allowing the flavors to meld together. You can add a little water if the mixture seems too dry.
Final Touch:
1.Once the fish is well coated with spices and the tomatoes have softened, remove from heat.
2.Garnish with fresh coriander leaves.
